Hot Lobster Roll

Hot Lobster Roll on a Toasted New England Bun
Makes three 1/3 lb. lobster rolls or four 1/4 lb. lobster rollsIngredients
- 1 lb. lobster meat
- Fresh tarragon roughly chopped
- Fresh parsley roughly chopped
- Fresh chive roughly chopped (optional)
- 1 stick salted butter
- A wedge of lemon
Preparation
- Dice lobter in 1/2 inch to 3/4 inch pieces
- Melt butter in a large sauce pan
- Add lobster meat and simmer on medium-low heat
- Add herbs
- Add juice from half of the lemon
- Toss lobster meat in butter for 3-4 minutes or until warm
- Gently season with sea salt and pepper
- Serve in toasted New England roll with a lemon wedge on the side
