Local Bay Scallops Broiled with Bread Crumbs
Serves 2-4Ingredients
- 1 lb. Bay Scallops
- 3-4 tablespoons butter
- Seasoned panko bread crumbs
- Salt and pepper to taste
- Capers and a wedge of lemon (optional)
Preparation
- Pre-heat oven to broil.
- Place Bay Scallops on a small cast iron skillet and pat them dry.
- Season with salt and pepper and place 3 or 4 thinly sliced pats of butter on top of scallops.
- Add seasoned panko bread crumbs if desired.
- Broil just until tops of scallops turn a light golden brown. The scallops don't need to be cooked all the way through.
- Garnish with capers and a wedge of lemon.
Tip:
If you like the scallop cooked more, place skillet on stove top and cook on medium high heat for 3 minutes. If using a broil pan, bake scallops before broiling for 3-5 minutes at 375.
